
I’ve always loved fruit salads. I haven’t, however, always been a fan of avocado. I can remember my grandmother always having a plate of cut avocado at family meals and trying my best to stay far, far away from it. That changed during my second pregnancy. For some reason I had a massive craving for them the entire nine months. My husband couldn’t bring them home often enough and, being that we lived in California at the time, they were so buttery and rich it was almost sinful. Now that my ‘must eat avocado NOW’ cravings are long gone I can enjoy it subtly combined with my favorite fruits – like this recipe for Avocado Strawberry and Mandarin Salad with Brown Sugar Vinaigrette.

There are actually over 80 varieties of avocados – the most common (and most likely to be in your kitchen right now) is the Hass. Luckily they are available all year. Fun Fact: Did you know the avocado is also known as the ‘Alligator Pear’?

- 1 avocado, cubed
- 5 - 6 strawberries, sliced
- 1 can mandarin oranges (in fruit juice), drained
- ½ c. extra virgin olive oil
- ¼ c. apple cider vinegar
- 2 tbsp light brown sugar
- ½ tsp salt
- ½ tsp white pepper
- *optional: fresh basil
