During a recent trip to Orlando I got my first taste of the famous “Butterbeer” from Harry Potter. Oh …my. I knew I had to figure out how to make my own version of it at home. After a few more sips (for science, of course) I found it tasted a little bit like root beer and a little bit like cream soda. When Collective Bias asked me to create a recipe using A&W Root Beer and Edy’s Grand Ice Cream from Nestle…well I knew just what it would be. A Butterbeer Float!

Our family has been spending more time outside in the beautiful summer weather and this is the perfect way to cool off after a picnic lunch and tons of playtime in the sprinklers. Edy’s Grand Ice Cream contains half the fat of other leading ice cream brands so I didn’t have to feel so guilty about sipping out in the sun. Not to mention – A&W Root Beer and Cream Soda are naturally caffeine free, so even our three year old can enjoy the rich, refreshing treats.

To add a little extra magic, we froze some of the A&W Cream Soda in star shaped ice trays. It’s a great way to keep your float cold in the summer heat without losing any of the flavor.

You can’t have butterbeer without two very important ingredients: real butter and butterscotch! Unfortunately, the store was all out of ready to pour butterscotch so we decided to flavor our floats with caramel.

Butterbeer Ice Cream Float
- 2 cups A&W Rootbeer
- 2 cups A&W Cream Soda
- 1 cup Torani Syrup (Buttered Rum, Caramel or Butterscotch)
- 3 tablespoons salted butter
- Edy's Butterfinger Grand Ice Cream
- Caramel or Butterscotch Ice Cream Topping (Syrup)
- Melt butter in the microwave until a liquid
- Stir Torani Syrup into butter until blended
- Add Rootbeer and Cream soda to large pitcher or mug
- Stir syrup and butter mixture into soda *careful, may cause fizzing
- Pour out drink mixture into glasses or mugs
- (optional - add ice cubes at this point)
- Scoop ice cream onto drink mixture
- Drizzle with caramel or butterscotch ice cream syrup

I think this may become a summer family favorite in the Smith house. Which is fine by me. Half the fat means I can have TWO of them…right?
