School is back in session! That means hungry tummies running in the front door after a long day of learning and play. Both my Kindergartener and my High School Senior come home craving real food. They don’t want chips or snacks – they want real recipes that will fill them up. But, that doesn’t mean I can skip the creativity!
Thanks to some of the great back to school deals at our local Price Chopper, I was able to put together an after school meal that will make both of them happy.
Both boys love roll-up sandwiches. For this one I combined Hillshire Farm Roast Beef, fresh baby spinach, shredded red cabbage and Price Chopper smoked Gouda. Wrapped in a whole wheat flatbread – it’s sure to replenish their energy and satisfy their taste buds.
Along with the roll-up, I created an after school parfait. I layered Yoplait Vanilla Greek Yogurt with Honey Nut Cheerios, raspberries and blueberries.

I must admit, afterwards I made another Honey Nut Cheerios and fruit parfait for myself. How could I resist? Sometimes even mom needs an after school snack!
