On my recent cruise to Cozumel, I was amazed with all of the different shops I found aboard the Liberty of the Seas. They had everything from a specialty wine bar to an afternoon cafe, full of finger sandwiches and gourmet coffee. But, what I didn’t expect was a cupcake shop. The Cupcake Cupboard offers passengers a chance to not only purchase delicate cake treats, but also learn how to make them. Now I’m going to pass along the tricks to make this cool Double Cheeseburger Cupcake with Fries.

We were given a private lesson right inside the cupboard, from pastry chef Marlon Eugenio.

Yellow and chocolate cupcakes work best. Make sure to let them cool overnight before you put your cheeseburgers together.

We used gummi limes to create the pickle slices, but you could use any jelly candy that is green and can be formed into a circle.

What You’ll Need (per finished cupcake):
- 2 yellow cupcakes
- 1 chocolate (or other brown) cupcake
- 1 pc orange fondant – cut into a 4″ x 4″ square
- 1 pc green fondant – cut into a 4″ wide circle
- Cocktail toothpicks (the kind with the ruffle on the top)
- white sprinkles
- red icing
- yellow icing
- small icing tip & bags
Step 1: cut ONE yellow cupcake into three pieces – side to side. This creates the bottom bun, center bun and top bun.
Step 2: cut the chocolate cupcake in the same way, setting the top of the cupcake to the side. (We won’t be using that, but you can eat it while you work!)
Step 3: Prepare your ‘lettuce’ and ‘cheese’:

To make your cheese more ‘melted’, pull gently on the corners – stretching them out slightly – before placing it on the cupcake. To create your ‘lettuce’ : press a toothpick from the center to the outer edge, creating a line. Do this around the entire piece of fondant to form ‘ruffles’.
Step 4: You should now have all the pieces to make your cheeseburger. Begin stacking them like a real burger: bun, burger, cheese, bun, burger, lettuce, round top bun. *Make sure to use your yellow and red icing on top of each layer. Allow the icing to drip over the edges like real ketchup and mustard. Feel free to use additional icing in the middle to help hold the next layer in place, pressing gently before moving on to the next. Don’t forget to save some of your red icing for your ‘fries’


Step 5: Sprinkle the top, round bun with white sprinkles/jimmies (those are your sesame seeds).
Step 6: Create your ‘pickle’ with the green gummi candy and then insert a toothpick through the candy into the cupcake.

Making your fries: Slice your second yellow cupcake into sticks. With the cupcake sitting upright, cut down from the top to create 4 slices. Then cut each slice into sticks, or fry shape. Place them on your plate, drizzle with red icing and (optional) add white sprinkles for ‘salt’.
