Since my husband and I switched to a healthier eating lifestyle, we’ve been searching for ways to adapt our favorite meals. One of our guilty pleasures was pizza night, so we’ve been developing new, delicious ways to enjoy pizza without the heavy grain and grease. Recently, Tyson asked if I’d like to create a recipe with their new Individually Frozen Chicken Breasts and share it with my readers. The Southwest Pepper Trio sounded great, but it was the Smokey Steakhouse flavor that really got my attention. I couldn’t wait to use them in a new pizza creation.
While this is not 100% Paleo friendly, it’s definitely a wonderful alternative to traditional pizza that leaves you feeling bloated and tired. It features an almond based, grain-free, gluten-free crust and, instead of sauce, It combines the robust flavors of tomato, artichoke hearts and oregano with Smokey Chicken.

The crust recipe is easy and only takes a few minutes. Spread thick it will yield a 10″ crust – spread thin it will yield a 12″ crust. This paleo crust is the best I’ve found and uses Arrow Root to give you an amazing, crunchy edge.

My three year old stood beside me the entire time I was cooking the pizza – mouth watering. He could barely wait for it to cool down after. Once he’d finished his second slice I managed to talk him into saving the rest for later, but only with the promise that I would ‘make it again and again, mom!’ The best part is, I ate two slices myself and I feel satisfied, but not heavy. I love the extra protein boost from the almond crust.

- 1½ cup almond flour
- ¾ cup arrowroot powder
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp oregano
- ¼ tsp garlic powder
- ¼ tsp black pepper
- 2 eggs
- ⅓ cup milk (or almond milk)
- 1 can artichoke hearts
- 1 large tomato
- 2 cups shredded mozzarella cheese
- olive oil
- 1 - 2 Tyson Smokey Steakhouse Chicken Breasts
- Bake chicken breast according to directions and then cut into thin slices or cubes and set aside
- Preheat oven to 425 degrees F and grease a pizza pan or pizza stone.
- Combine all dry ingredients until completely blended.
- Add eggs and milk to dry ingredient mixture.
- Mix well. Mixture should be thick, but not difficult to stir.
- Use a wooden spoon or spatula to spread mixture on pan/stone in a circular motion, beginning in the middle and working your way outward.
- Bake for 10 - 12 minutes.
- Remove from oven and cover with 1 cup of cheese.
- Place your artichoke, tomatoes and chicken.
- Drizzle lightly with olive oil.
- Optional: sprinkle with oregano.
- Cover with remaining 1 cup of cheese.
- Place back in oven and cook for 10 minutes.
